  MUSCOVADO-ROASTED                 PLANTAINS

                                        AFRICAN RECIPE




 

 

 

For 4 to 6 servings

 

Large ripe plantains, ends cut off, peeled, and cut into thirds

 4 teaspoons olive oil

½ teaspoon coarse sea salt

 1 tablespoon maple syrup

 ¼ cup muscovado sugar

 

 First preheat the oven to 375°F. Line a large, rimmed baking sheet with parchment paper.

 

Place  the plantains in a large bowl, drizzle with 2 teaspoons of the oil, and sprinkle with the salt. Toss gently until the plantains are evenly coated. Put them on  the lined baking sheet and bake for 40 minutes. You have to  stirr gently turning every 10 minutes, until  it is fork-tender and lightly browned.

 

Then combine the maple syrup, muscovado, and remaining 2 teaspoons oil in a small bowl and stir with a fork to mix well. Pour into a large skillet and warm over high heat until melted, about  25 or30 seconds. Now  Add the plantains, and cook for 1 minute. Remember to  toss vigorously to coat evenly.

Muscovado, also khandsari and khand, is a type of partially refined to unrefined sugar with a strong molasses content and flavor. It is considered either a nun centrifugal cane sugar or a centrifuged, partially refined sugar according to the process used by the manufacturer.

 Muscovado contains higher levels of various minerals than processed white sugar, and is considered by some to be healthier.

 It is used in food and confectionery and the manufacture of rum and other forms of alcohol. The largest producer and consumer of muscovado is India.
