EGG CURRY
Egg curry. Enjoy tastiest heathy nutritious food for lunch dinner or Breakfast,
Egg curry.
1 sliced Onion
3 sliced Green chillies
1/2 Fenugreek seeds ( It is called Uluhal in Sinhala Language)
Small piece of cinnamon stick
1 inch piece of pandan leaves It is Rampe in Sinhala) if available
1 inch sprig of (curry leaves) - if available
1 teaspoon full of Maldive fish grounded (Optional)
1 1/2 table spoon oil
1 Can of Tomatoes
1.5 Cups of Fresh Milk
1 teaspoon of Salt or to your taste
1/10 teaspoon of turmeric
1 table spoons of red chillie powder
2 tablespoon of Roasted Curry Powder
10 or 12 Eggs - Hard Boiled - cut in half
First Put the oil in a saucepan and fry the first seven ingredients.
When the onions are fried enough( golden brown)add the can of tomatoes the chillie powder, turmeric and salt and cook for a few minutes.
Then add the milk and curry powder and wait till it starts to bubble. Then add the Eggs, salt to taste and let it simmer for awhile.
6 or 5 Servings.
