CABBAGE AND PEA , THAI RECIPE
1 small head fresh green cabbage (1 kg)
4 tablespoons vegetable oil
½ teaspoon ground turmeric
· teaspoon ground red pepper (cayenne)
1 teaspoon salt
½ teaspoon ground black pepper
1 120 g frozen or fresh green peas
1. Take away the outer layer of leaves from the cabbage head and
discard. Cut the cabbage into 4 even segments through the stem. Cut out the
tough bottom core in each segment and discard. Take one segment at a time, cut
it crosswise into thin 3 mm slices. The slices will fall apart into thin
shreds.
2 Pour the oil into a large saucepan and put over medium
heat. When the oil is heated, add the shredded cabbage, turmeric, red
pepper, salt, and black pepper. Cook for 15 minutes, stirring occasionally. The
cabbage will start to reduce in volume.
3 Now add the peas and stir to combine. Cook until the cabbage is tender,
stirring occasionally, about 5 minutes.
