       ROAST STUFFED CHICKEN- SOUTH AFRICAN                                           RECIPE

 

1.5 kg chicken, cleaned and trimmed

 Onion Stuffing  (   Read below)                                                              

 salt

milled pepper

 

25 ml margarine, butter, chicken fat ( or sunflower oil)

 

 First fill the chicken with the stuffing. Close the openings with a skewer or thread. Truss the chicken, if you desire. Then place it on in a deep roasting pan (do not cover). Use the salt and pepper to season., and rub the margarine, butter, chicken fat or oil all over the chicken. Cover the bottom of the roasting pan with water. Then roast at 200 °C for 30 minutes. Lower the temperature to 180 °C and continue roasting, basting occasionally, for another 45 minutes to 1 hour.  You have to cover the roasting pan with foil if the chicken browns too much.

           You can use this stuffing

 

500 ml fresh white breadcrumbs

 

60 g prepared shredded suet

 

2 g salt 2g milled pepper

 

 

1 medium onion, finely chopped

 

15 g finely chopped fresh sage

 

1 large egg

 

15 ml milk

 

First mix the breadcrumbs, suet, salt and pepper. Blanch the onion in boiling water for 2–3 minutes. Drain well and stir into the breadcrumb mixture. Stir in the sage. Beat the egg and milk together, Then add to the dry ingredients and mix well. Now your stuffing is ready.
