 How to cook Tasty Easy To Cook Nutritious Food For Breakfast Lunch Dinner _ Recipe



  



VEGETABLE FRITTERS


1  peeled large potato
2 onion
1 zucchini
35g butter
half teaspoon curry powder
salt, pepper and lemon juice to taste
chilli (optional)
2 tablespoons plain flour
1 beaten egg 
half cup vegetable oil

Salsa Dipping Sauce:
1 tomato, chopped
2 spring onion, sliced
 cup plain yoghurt
2 tablespoons lemon juice
1 tablespoon finely chopped parsley

First Coarsely grate each of the vegetables separately. Mix potato, carrot and onion together. Reserve the zucchini.

Then  Heat butter in a pan. Gently cook the curry powder for 1 minute. Add grated potato, carrot and onion. Cook for 5 or 6 minutes, until the mixture has thickened.  Add salt, pepper, lemon juice and chilli (optional) while cooking

 Put to a bowl. Add grated zucchini and flour. Mix well. Stir in egg  well to combine

 Heat oil in frying pan. Drop  tablespoonsful of mixture into pan. Cook on both sides until crisp. Drain on absorbent paper. enjoy with Salsa Dipping Sauce.

 To prepare Salsa Dipping Sauce: PUT all the ingredients in a food processer or blender. Process until smooth.
